We won't repeat the first part of the story - you just read it. Let's cut to the part where you know there are 10 other bars in the area sending each other visitors.
You and the other bar owners get together to discuss how well this is working and decide to invite some other local bars to join you (link exchange requests). Between all of you, you produce leaflets for the customers. These leaflets show where all the local bars are and what different beers they sell (links pages). We would be glad to recommend your bar, however, we need to know that your bar is popular before we tell our customers. The busier your bar is, the more customers we will send you. You all reply with your own letter saying "Sure, please feel free to visit our bars, you will see how popular they are by taking a look at all our leaflets (link pages). We would be happy to sell our beer to your customers as well. On top of that, just in case our group of bars doesn't have a beer a customer wants, we will send them to you for advice, because we know that you are aware of many more bars that are not in our group, that may have what they are after." You still get all the back road customers from your network of friendly bars (link partners) because they are promoting your bar on their leaflets (link pages), they are even making those leaflets easily available to their customers (not hiding the links page). You get the best of both worlds without paying the barman or relying on him for your customers.
